Eliza Nelson graduated from the University of Massachusetts Amherst in 2015 with a degree in kinesiology and has been a personal trainer ever since. She says she’s fascinated by the human body and the mental component that comes with fitness. In 2015 she became a WNBF Bodybuilding pro. Currently, she is adjusting to life as a new mom, and has found joy in finding the balance between family life, her personal training business, and her own fitness endeavors. Currently, she has been enjoying adding in hot yoga sessions or running in between her five strength training days a week, to get an extra sweat in.

What She Ate: 

Lately, Nelson has loved making mini egg frittatas as part of her weekly meal-prep. The frittatas are an egg white mixture with diced mushrooms, onions, turkey bacon, and spinach portioned into muffin tins. They are baked in the oven and she’ll store them in the refrigerator for a quick grab and go breakfast in the morning, or throw them in a wrap. If she has a little more time in the morning, she’ll make avocado toast with turkey bacon and a fried egg with some sea salt, pepper, and sriracha.

Why She Chose It: 

“I never skip breakfast,” she says. “Even if it means adding a scoop of protein powder to my iced coffee with some almond milk. Steady energy throughout the day is important between coaching my clients, bootcamp workouts, my own workouts, and taking care of my son.”

Along with making sure to have breakfast in the morning, she also drinks one liter of water before 7 a.m., which helps her stay hydrated and energized. “If I don’t take care of myself, I won’t be able to give to my clients and the other people in my life.”

Everyone is happier, including herself, she says, “when my nutrition is on point.”
